Fried Rice-Best =============== This makes 8 service in 30 min or less. Easy This seems to be good, but need to have Katie try out. I think she will like it. This is intended to be used with some topping like teriyaki chicken, but you could make it chicken fried rice by adding chopped chicken at end and mix in until warmed. Ingredients: - 3 cups cooked rice (ideally prepared a day before + cooled in fridge to dry a little and not be as much as fresh rice). If too sticky, try Jasmine or a long grain rice. - 2 tbsp sesame oil (I sometimes approximate + splash into pan) - 1 cup chopped white onion (or at least some powder) - 1 cup frozen peas + chopped carrots (and/or matchstick zucchini, snowpeas, red peppers, etc). - 2-3 tbsp soy sauce (Also approximate + splash into pan) - 2-3 lightly beaten eggs - 2 tbsp chopped green onions on top (Optional-usually skip) Instructions: 1) Preheat wok or large cast iron skillet at medium 2) Add 2 tbsp seasame oil, white onion, frozen veggies + cook until tender(If not precooked/frozen, put those in first when cooking to give more time to soften) 3) Slide veggies to size + pour eggs in skillet + scramble. Once scrambled, mix veggies/eggs together. 4) Add rice + mix together 5) Add soy sauce + mix together + all warm OPTIONAL: Mix in chopped chicken here if you want chicken fried rice 6) Top with green onions + serve Tastes great with some Teriyaki chicken slices on top Original source based on: https://therecipecritic.com/easy-fried-rice/
